Lemon Rice Soup for Immune Support

Lemon Rice Soup Recipe.

Ingredients:

  • 1 yellow onion 
  • 3 celery stalks
  • 2 cartons of Kettle & Fire Chicken Bone Broth 
  • 1/2 cup of jasmine rice 
  • 1 cup of water
  • 1/2 cup of lemon juice
  • 1 tablespoon of extra virgin olive oil
  • parsley to garnish (optional)
  • parmesan cheese to garnish (optional)

Directions:

  1. Chop celery and onions.
  2. Turn a soup pot (stainless steel or ceramic) on medium heat. 
  3. Add the vegetables to a soup pan with extra virgin olive oil. 
  4. Stir the vegetables until golden, taking 6-10 minutes. 
  5. When golden, add in two cartons of bone broth and one cup of water.
  6. Once the broth is simmering, add in half a cup of washed rice. 
  7. Separate the yolks of two eggs and add to a mixing bowl with half a cup of lemon juice. Whisk together the egg yolks and lemon juice. 
  8. Cook the rice for 15 minutes while the soup pan is covered.
  9. Slowly pour the yolk/lemon mix into the soup.
  10. Take the soup off the heat and let it sit covered for 10 minutes.
  11. Add parsley and parmesan cheese to garnish!
