Small grain mills have nearly disappeared from the United States. In the 1800s there were over 23,000 grain mills in the United States and as of 2019 there were only 183. The twenty largest US milling operations produce close to 95% of all the flour milled and supply almost all grain and flour products on grocery store shelves. The milling giants incentivize chemically intensive row cropping that depletes topsoil, relies on toxic herbicides like glyphosate, and decreases biodiversity. Small mills are forced to close for good as the industry keeps consolidating.

There has been a resurgence of small organic grain mills in the last four years. I compiled a list of some of the local, organic grain mills you can support.
